Meet the Press
If you have a picked olive in your
hand, there's no time to
lose. All our olives are pressed within 24 hours of picking, and
we keep them in an atmosphere of food grade nitrogen to inhibit oxidation.
When we blend our varieties to achieve the right taste naturally, we always
blend the fruits before pressing, not afterwards in the oil.
Olea
Naturae is cold-pressed, meaning that the process takes place at
room temperature. We use only the first 90% of the press too
- that's what defines extra virgin oil - and no chemicals
thanks.
After this, the oil is left to stand, allowing
sediment to settle naturally. When you pour
Olea Naturae fresh from
the
bottle you’ll
see it still retains a slightly cloudy appearance.
