An innovative two-stage mechanical crusher is also part of this press. This means that the fruit pulp is removed at the first stage of pressing and the crushing of the olive stone and residual pulp is completed at the second stage. The two-stage crushing process prevents the oil from acquiring a very strong or bitter taste.
