Here are some useful ideas you can use with olive oil for your next meal:
  • Mix it with a few herbs and vinegar, it makes salads taste refreshing, not greasy nor heavy.
  • For an added flavour, add olive oil in marinades for barbecues and on steaks.
  • Mix garlic into some oil then use it to brush up fish such as a Salmon, New Zealand Tarakihi or Gurnard and top off with squeezed lemon.
  • When roasting meats and poultry, brush with olive oil to seal in the juices.
  • Baste it on sliced eggplant, zucchini and tomatoes, and grill lightly.
  • Toast some French bread or baguettes and top it off with a thick mixture of olive oil and garlic, then roast at 180 degrees Celsius for 20 minutes.
  • Cook some chopped garlic in olive oil and set aside for pasta or rice for a quick side dish.
  • Can't get enough of those sweets? Use light olive oil as a substitute to vegetable oil in baking brownies and chocolate chip cookies. You can then have your cake and eat it too, without feeling too guilty!
  • Sauté spinach with pine nuts in a little bit of olive oil.
